Recipe: Mini Quiches

If you’ve been following my page for a while, you will know that I love baking, I love pastry and well, I love making quiches! Actually, a quiche was the very first thing I learnt to cook so my love with them began many many years ago. Without a doubt we eat quiche once a week in our house, and I make a variety of fillings so it isn’t predictable and boring. I think they are versatile and a great way of including a variety of vegetables into our diet. These mini quiches are a slight tweak to the standard quiche, but they are great for your child’s little hands to handle, are perfect to pack in your child’s lunchbox and to serve at birthday parties. The recipe below is one of many to use, and the benefit is you can make a variety of different flavours to suit the different members in the family at the same time. In six simple steps, here is how you can make them.

 

Ingredients

Puff pastry

Ham

Cherry tomatoes

2 eggs

1/4 cup of grated cheese

1/2 cup of milk

 

** You will need a mini muffin tray or mini quiche tray

Step 1.

Lay out the puff pastry on a bread board. Using a glass, cut out round holes, a similar size to those in your muffin tin. Grease the tin and place the puff pastry in the holes.

Step 2. 

Chop the ham into small pieces and place into the pastry.

Step 3.

Sprinkle the grated cheese onto the ham.

Step 4. 

Slice the cherry tomatoes in half.

Add half a cherry tomato to each quiche, placing on top of the grated cheese.

Step 5.

Mix the 2 eggs and 1/2 cup of milk together.

Pour a small amount into each quiche, careful not to go above the edges.

Step 6.

Place in the oven at 180 degrees celsius and bake for around 20 minutes, or until cooked through.

The mini quiches are ready to enjoy warm, or can be put in the fridge or freezer to be eaten at a later time.

Your children will love these and they are a fantastic lunch addition to their lunch box.

If you want to make different fillings it is very easy to do. Just use the liquid mixture of 2 eggs and 1/2 cup of milk with the grated cheese and add anything else that you wish.
